This is my go-to recipe for a simple summer meal which is perfect for a hot day on the patio and a cold one at your desk.

I have actually made this recipe twice now and both times have had amazing results. The key to getting a big hit of cucumber is the amount of sugar you add. I used two tablespoons of honey and a half teaspoon of lime juice and that worked out to be 4 and a half cups of cucumber. If you want to add more you can just add more honey and a dash of lime juice.

What’s cool about using Honey and Lime Juice is that you can also add some cinnamon or other spices to it. This is a good recipe because it’s full of vegetables and it makes a great snack.

I know you want us to stop using cucumbers in this recipe, but the truth is you can use any veggies that you like. If you are a fan of cucumber flavored soups, you can add as little as half a cup of cucumbers.
